Cozy Simmer Pot Recipes Great for Fall!

        by Amy Eychner
        Simmer Pot

☕🍂✨4 easy simmer pot scents to make your house smell like a hug!

Love when your home smells amazing but don’t want candles or complicated recipes? Simmer pots are the lazy (but classy) way to fill a room with bakery-level vibes. Below are four simple simmer-pot recipes: Pumpkin Spice Latte, Apple Pie, Coffee & Cinnamon, and Maple. Each recipe includes stovetop and slow-cooker options, quick swaps, and tiny safety reminders so your cozy vibes stay fire-safe. Let’s simmer!

How to use a simmer pot

Stovetop: Add ingredients + 3–4 cups water to a small pot. Bring to a gentle simmer, then reduce heat to low. Keep an eye on water level; add more as needed. Simmer 1–3 hours.
Slow cooker: Add ingredients + 4–6 cups water. Set to low and leave for several hours. Great for hands-off scenting, but still check periodically.
Tip: Refill with water and a splash of vanilla or citrus juice to refresh the scent.

⚠️ Safety first: Never leave a simmer pot unattended for long periods. Keep burner low, don’t let water evaporate completely, and turn it off if you leave the house.

Pumpkin Spice Latte1) Pumpkin Spice Latte 🎃☕

Vibe:Warm pumpkin, cozy spice, and a whipped-latte sort of hug.

        Ingredients:

Peel of 1 orange (or 1/2 orange, sliced)
2 tsp pumpkin pie spice (or 1/2 tsp cinnamon + 1/4 tsp nutmeg + 1/4 tsp ginger + pinch of cloves)
1 tsp pure vanilla extract (add near the end)
         3–4 cups water

        Steps:

        1. Combine water, orange peel, and pumpkin pie spice in pot/slow cooker.
        2. Bring to a gentle simmer, then low heat. Let scent bloom 1–3 hours.
        3. Stir in vanilla just before serving/switching off for a creamy, latte-like finish.

Swap: Add a star anise for a slightly licorice note. Avoid actual milk or pumpkin purée (it can get funky).

Apple Pie Simmer Pot Recipe2) Apple Pie 🥧🍎

Vibe: Grandma’s kitchen, crisp apples + pastry spice.

        Ingredients:

1–2 apples, sliced (sweet variety like Fuji or Honeycrisp)
         2 cinnamon sticks
4 whole cloves (or 1/4 tsp ground clove)

Peel of 1/2 lemon or orange (optional)
        3–4 cups water

        Steps:

        1. Add apple slices, cinnamon, cloves, citrus peel, and water to pot/slow cooker.
        2. Simmer gently for 1–3 hours; refill water as needed.
        3. For extra bakery vibes, stir in a splash of vanilla or a tiny dab of butter-like almond extract at the end.

Swap: Replace fresh apples with 1 cup unsweetened applesauce for a richer apple scent.

Coffee & Cinnamon Simmer Pot Recipe3) Coffee & Cinnamon ☕️🔥

Vibe: Morning café aroma without brewing a pot, perfect for weekend slow mornings.

        Ingredients:

1/4 cp coffee beans (or 1/2 cup used grounds)
        2–3 cups water
        1 cinnamon sticks
        1 tsp vanilla extract (optional)
Orange peel or a vanilla bean half (optional)

        Steps:

        1. Combine coffee grounds + water + cinnamon in pot/slow cooker.
        2. Bring to a low simmer. Let scent permeate for 1–2 hours (coffee scent can fade or get bitter if boiled hard. Keep heat LOW).
        3. Add vanilla near the end for a sweeter scent.

Heads up: Using actual coffee is aromatic but can turn bitter if boiled hard for hours. Keep to a gentle simmer or use the slow cooker on low.

Maple Simmer Pot Recipe4) Maple 🍁🥞

Vibe: Pancake-house warmth, sweet, woodsy, and addictive.

        Ingredients:

2–3 tbsp pure maple syrup (not imitation)
        2 cinnamon sticks
        2 star anise
        3–4 cups water

        Steps:

        1. Mix water, maple syrup, cinnamon, and star anise in a pot/slow cooker.
        2. Simmer low for several hours. The maple will sweeten the air without making a sticky mess (it disperses into the steam).
        3. Top off with water and a splash more maple if scent softens.

Swap: Add a vanilla bean or a pinch of nutmeg for more depth.

        Quick tips & variations ✨

Citrus = brightness.** A strip of orange or lemon makes any scent pop.
Use extracts sparingly.** 1 tsp of vanilla or almond extract is potent — a little goes a long way.
Refresh:** Add water + a small splash of extract/juice when scent weakens.
Make a batch:** Simmer in a slow cooker during gatherings to keep the house smelling fab all day.
Kid/pet caution:** Strong essential oils can bother pets; stick to food-safe ingredients and keep ventilation in mind.
